Breakfast For Dinner || Ham & Cheese Quiche

Do you know those evenings when dinner is calling out to you to be made (or maybe it's actually your children and husband calling), but you just don't have it in you to whip up a gourmet meal or anything close?? I feel that this type of behavior happens quite often in the Hill household. It's absurd, but true and I'm owning it. Dinner can be such a pain to fix, especially when all you want to do is kick your feet up, browse through Instagram, and hope the doorbell rings and a delivery man is standing on the other side of the door. 

So while that may happen in my wildest dreams, realistically I'm still responsible for dinner. And one way I love to have dinner is served up in disguise as breakfast. Who's with me?? Outside of pancakes, one of my favorites is quiche. Don't leave me now, this quiche is SO simple and so delicious! The best part, you can make it ahead of time; and while it's reheating in the oven you really can kick your feet up and scroll through your Insta. 

In itself, it's fairly filling. So I suggest pairing it with a variety of fresh fruit. I'm thinking strawberries, blueberries, and nectarines! 


  • What You'll Need
    • Small box of Jiffy pie crust
    • 1 cup shredded cheddar cheese
    • 1/2 cup Swiss cheese
    • 1 TBS all-purpose flour
    • 1/2 cup diced, cooked ham
    • 7 eggs
    • 2 cups half & half
    • 1/2 TSP dry mustard
    • 1/4 TSP salt

  • What You'll Do
    • Make the pie crust following the box's instructions. Roll it out to about a 1/4 - 1/2 of an inch thick. Place it in a pie dish, and pinch around the top with your fingers. Poke holes in the bottom and sides of the pie crust with a fork. Place in the oven and cook for 8 minutes at 400°. Remove and set aside.
    • In a small bowl combine the two cheeses and the flour. Mix well. Once the crust has cooled down, Sprinkle the cheese evenly across the bottom of the pie crust. Then evenly add the diced ham.
    • In a bigger bowl, beat all of the eggs together. Then add the half & half, dry mustard, and salt. Whisk well. 
    • Gently pour into the pie crust.
    • Bake in the oven for 55-60 minutes until it has set. 


Now it's time to slice and serve some quiche. Like I said, you can cook the quiche beforehand. Just let it cool down, store it in the fridge, and bake it at 400° for 15-20 minutes when you're ready to serve it up! Did I mention this makes great leftovers??
